Ingredients
For the Chocolate Cake:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/4 + 1/8 cup Hershey’s Special Dark Cocoa powder
- 1 teaspoon baking soda
- 1 large egg
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 3/4 teaspoon vanilla extract
- 1/2 cup boiling water
For the Eggless Cookie Dough:
- 6 tablespoons unsalted butter softened
- 1/2 cup brown sugar packed
- 1 teaspoon vanilla extract
- 1 cup heat-treated all-purpose flour
- 1 –2 teaspoons milk as needed
- 1/2 cup mini chocolate chips
For the Ice Cream Layer:
- 8 ounces cream cheese softened
- 1/2 cup brown sugar packed
- 1/8 cup milk
- 2 teaspoons vanilla extract
- 8 ounces Cool Whip or homemade whipped cream
- 1/2 cup mini chocolate chips
For Decoration:
- 4 –8 ounces Cool Whip for icing
- Additional mini chocolate chips for garnish
- Chocolate sauce optional
Instructions
1️⃣ Prepare the Chocolate Cake:
- Preheat the oven to 300°F (150°C). Grease and line two 8-inch round cake pans.
- Sift together flour, sugar, cocoa powder, and baking soda in a large mixing bowl.
- Add egg, buttermilk, vegetable oil, and vanilla extract; mix until smooth.
- Gradually add boiling water, stirring until combined.
- Divide batter between pans and bake for 25-30 minutes. Cool cakes completely.
2️⃣ Make the Eggless Cookie Dough:
- Cream softened butter and brown sugar until light and fluffy.
- Add vanilla extract and mix. Gradually fold in heat-treated flour, adding milk as needed.
- Stir in mini chocolate chips and form small balls. Refrigerate.
3️⃣ Prepare the Ice Cream Layer:
- Beat cream cheese and brown sugar until smooth. Add milk and vanilla.
- Fold in Cool Whip and mini chocolate chips, then add cookie dough balls.
4️⃣ Assemble the Cake:
- Line a 9-inch springform pan with parchment paper. Place one cake layer inside.
- Spread cookie dough ice cream mixture over the cake and top with the second layer.
- Freeze for at least 4 hours.
5️⃣ Decorate the Cake:
- Remove from the springform pan and frost with Cool Whip.
- Garnish with mini chocolate chips and drizzle with chocolate sauce if desired.
6️⃣ Serve:
- Let the cake sit for 10-15 minutes before slicing. Enjoy!
