Ingredients
  

  • 2 lbs 900g beef stew meat, cut into bite-sized pieces
  • 4 large potatoes peeled and chopped into chunks
  • 3 large carrots peeled and chopped
  • 1 large onion diced
  • 4 garlic cloves minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons flour optional, for thickening
  • 2 tablespoons olive oil for browning the meat
  • Fresh parsley or chives for garnish

Instructions
 

Prepare the Meat:

  • Season the beef stew meat with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat and brown the beef on all sides (about 5-7 minutes).

Add to the Crockpot:

  • Transfer the browned beef to the crockpot.
  • Add in the potatoes, carrots, onion, and garlic.

Make the Sauce:

  • In a small bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, and bay leaves.
  • Pour this mixture over the beef and vegetables in the crockpot.

Cook the Stew:

  • Set the crockpot to low heat and cook for 7-8 hours (or on high heat for 4-5 hours) until the beef and vegetables are tender.
  • Thicken the Sauce (Optional):
  • For a thicker stew, mix 2 tablespoons of flour with a little water to make a slurry and stir it into the stew about 30 minutes before it's finished cooking.

Garnish and Serve:

  • Remove the bay leaves, taste, and adjust seasoning with salt and pepper.
  • Garnish with fresh parsley or chives and serve hot.

Notes:

  • Customize this stew by adding other vegetables like peas, celery, or green beans.
  • Serve with crusty bread or over mashed potatoes.
