Ingredients
  

  • 2 lbs chuck roast cubed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 large onion diced
  • 3-4 medium carrots sliced
  • 2-3 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 3 tbsp tomato paste
  • 1 bay leaf
  • 3-4 medium potatoes cubed
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions
 

Prep the Beef:

  • Season the cubed chuck roast with salt and pepper. Heat olive oil in a skillet over medium-high heat, and sear beef on all sides until browned.

Layer Ingredients in Crockpot:

  • Add seared beef, onion, carrots, celery, potatoes, and garlic to the Crockpot. Pour in beef broth and Worcestershire sauce.

Add Seasonings:

  • Stir in tomato paste, bay leaf, thyme, and rosemary.

Cook:

  • Set Crockpot on low for 8 hours or high for 4-5 hours, until beef is tender and vegetables are cooked.

Serve:

  • Remove bay leaf before serving. Ladle stew into bowls and enjoy!

Notes

  • Searing the beef adds more depth to the stew, but it’s optional.
  • Adjust seasoning to taste after cooking.
