- 4 large bell peppers tops cut and seeds removed
- 1 cup Valbreso cheese crumbled
- 1/2 cup cooked quinoa or rice
- 1/4 cup cherry tomatoes chopped
- 2 tbsp parsley chopped
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
In a bowl, combine Valbreso cheese, cooked quinoa or rice, tomatoes, and parsley. Season with salt and pepper.
Stuff the mixture into each bell pepper. Place stuffed peppers in a baking dish.
Bake for 25 minutes, until peppers are tender.
