Ingredients
  

  • 4 large bell peppers tops cut and seeds removed
  • 1 cup Valbreso cheese crumbled
  • 1/2 cup cooked quinoa or rice
  • 1/4 cup cherry tomatoes chopped
  • 2 tbsp parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine Valbreso cheese, cooked quinoa or rice, tomatoes, and parsley. Season with salt and pepper.
  • Stuff the mixture into each bell pepper. Place stuffed peppers in a baking dish.
  • Bake for 25 minutes, until peppers are tender.

Notes

  • Use different colors of bell peppers for a vibrant presentation.
