Ingredients
  

  • 1 lb corned beef thinly sliced
  • 1 cup sauerkraut drained and patted dry
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 4 slices rye bread cubed
  • 2 tbsp unsalted butter melted
  • 1/2 tsp caraway seeds optional
  • Fresh parsley chopped (for garnish, optional)

Instructions
 

Preheat Oven:

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

Prepare Ingredients:

  • Cube the rye bread, shred the cheese, and drain the sauerkraut.

Assemble Layers:

  • Spread cubed rye bread in the baking dish as a base layer.
  • Evenly distribute the sauerkraut over the bread layer.
  • Layer with sliced corned beef and drizzle Thousand Island dressing over the top.
  • Sprinkle shredded Swiss cheese over everything.

Add Butter and Caraway:

  • Drizzle melted butter over the top and sprinkle with optional caraway seeds.

Bake Covered:

  • Cover with foil and bake for 20 minutes.

Bake Uncovered:

  • Remove the foil and bake an additional 10-15 minutes, until cheese is melted and golden brown.

Serve:

  • Let cool for a few minutes, garnish with parsley if desired, and serve warm.

Notes

  • Substitute Swiss cheese with Gruyere or a mild cheddar for a twist on flavor.
  • For extra texture, top with crushed rye chips or breadcrumbs before baking uncovered.
