Method
Preheat the Oven
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream the Butter and Sugars
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy.
Add Eggs and Vanilla
- Mix in the eggs one at a time, then stir in the vanilla extract.
Combine Dry Ingredients
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
Mix the Dough
- Gradually add the dry ingredients to the butter mixture and mix until combined.
Add the Oats
- Stir in the Quaker oats, raisins, and walnuts if using.
Shape the Cookies
- Scoop tablespoon-sized portions of dough and place them onto the baking sheet, leaving space between each cookie.
Bake
- Bake for 10–12 minutes until the edges turn golden brown and the centers remain soft.
Cool
- Let cookies rest on the baking sheet for 5 minutes, then transfer them to a cooling rack.

- For softer cookies, slightly underbake them by removing them from the oven when the centers still look soft.
