Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 cups Quaker old-fashioned oats
  • 1 cup raisins or chocolate chips optional

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream Butter and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients, stirring until just combined.
  • Fold in Oats and Mix-Ins: Stir in the oats and optional raisins or chocolate chips until evenly distributed.
  • Scoop and Bake: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are golden brown.
  • Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
