Ingredients
  

  • 1 gallon whole milk
  • 1/4 cup vinegar or lemon juice
  • 1/2 tsp salt
  • 1/2 cup cream optional

Method
 

  1. Heat milk to 190°F
  2. Add acid and stir
  3. Let curdle for 10 minutes
  4. Strain using cheesecloth
  5. Rinse with cold water
  6. Add salt and cream
  7. Chill before serving

Notes

  • Use fresh milk for best results
  • Adjust salt to taste
