Preheat oven to 350°F (175°C). Grease a bundt pan or deep baking dish.
Prepare the dough:
Cut each biscuit into quarters.
In a bowl, mix granulated sugar, brown sugar, and cinnamon.
Dip biscuit pieces in melted butter, then coat with sugar mixture.
Assemble the bread:
Layer coated dough pieces in the pan.
Drop spoonfuls of softened cream cheese (mixed with powdered sugar if desired) and cherry pie filling between layers.
Repeat until all ingredients are used, ending with a layer of dough.
Bake for 35-45 minutes until golden brown and cooked through. Tent with foil if top browns too quickly.
Cool in the pan for 10 minutes, then carefully invert onto a serving dish.
Serve warm, optionally topped with extra cherry filling, whipped cream, or ice cream.
