  • 1/2 pound thinly sliced beef or lamb
  • 1/2 pound thinly sliced pork
  • 1/2 pound firm tofu sliced
  • 6 cups chicken or beef broth
  • 2 tablespoons Sichuan peppercorns
  • 4 dried chili peppers
  • 4 slices ginger
  • 4 cloves garlic minced
  • 2 tablespoons vegetable oil
  • Assorted vegetables such as Napa cabbage, spinach, mushrooms, and bok choy Assorted dipping sauces (such as soy sauce, sesame oil, chili oil, and garlic sauce) Cooked rice or noodles for serving

Instructions
 

Prepare the Broth:

  • In a large pot, bring the chicken or beef broth to a boil over medium-high heat.
  • Add the Sichuan peppercorns, dried chili peppers, ginger slices, and minced garlic to the broth. Reduce the heat to low and let simmer for 10-15 minutes to infuse the flavors.

Set Up the Hot Pot:

  • Place a portable electric or gas hot pot in the center of the dining table.
  • If using a divided hot pot, pour the prepared broth into both sections. Otherwise, pour all the broth into the pot.

Prepare the Ingredients:

  • Arrange the thinly sliced beef, pork, tofu, and assorted vegetables on serving plates around the hot pot.
  • Set out the dipping sauces in small bowls for easy access.

Cooking:

  • Once the broth is simmering, guests can begin cooking their desired ingredients in the hot pot.
  • Using chopsticks or a ladle, add a few slices of meat, tofu, and vegetables to the simmering broth.
  • Allow the ingredients to cook for a few minutes until they are cooked through. Meat should be cooked until no longer pink, and vegetables should be tender but still crisp.
