Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cups cooked chicken shredded
  • 2 28 oz cans crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon chipotle powder adjust to taste
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh basil chopped (for garnish)

Instructions
 

Sauté Vegetables:

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.

Add Chicken and Seasonings:

  • Stir in shredded chicken, smoked paprika, thyme, and chipotle powder.
  • Cook for 2-3 minutes until fragrant.

Add Tomatoes and Broth:

  • Pour in crushed tomatoes and chicken broth.
  • Add bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.

Blend the Soup:

  • Remove bay leaf.
  • Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  • Alternatively, blend half the soup in a regular blender and return it to the pot.

Finish the Bisque:

  • Stir in heavy cream and simmer for an additional 5 minutes.
  • Taste and adjust seasonings as needed.

Serve:

  • Ladle into bowls and garnish with fresh basil.
  • Optionally, serve with crusty bread or croutons.

Notes

  • For a dairy-free version, substitute coconut cream for heavy cream.
