Ingredients
  

  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup butter or vegetable oil
  • 1 cup crushed pineapple with juice
  • ½ cup pineapple juice
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and grease a 9-inch cake pan.
  2. In a bowl whisk eggs, sugar, and melted butter until smooth.
  3. Add crushed pineapple, pineapple juice, and vanilla extract and mix well.
  4. In another bowl combine flour, baking powder, and salt.
  5. Slowly add dry ingredients to wet mixture and stir until smooth batter forms.
  6. Pour batter into prepared pan and level the surface.
  7. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool before slicing and serving.

Notes

Do not overmix the batter to keep the cake light and soft.
Use crushed pineapple with juice for extra moisture and flavor.
Cake can be topped with cream cheese frosting or pineapple glaze.
