Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tbsp butter optional
  • Fresh parsley for garnish
  • Lemon juice optional

Method
 

  1. Season chicken with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a skillet and sear chicken until golden. Remove and set aside.
  3. In the same pan, sauté onion until soft, then add garlic.
  4. Stir in rice and toast for 1–2 minutes.
  5. Pour in chicken broth and mix well.
  6. Return chicken to the pan, cover, and simmer for 20 minutes.
  7. Let rest for 5 minutes, garnish, and serve.

Notes

  • Use low heat while simmering to avoid burning the rice
  • Add butter at the end for extra richness
  • Let the dish rest before serving for best texture
