Ingredients
  

  • 1 cup basmati or long-grain rice
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives sliced
  • 2 cups vegetable or chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley or cilantro chopped, for garnish
  • Optional: Feta cheese for topping

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • Heat olive oil in a large saucepan over medium heat. Add chopped onion and garlic; sauté until fragrant and softened.
  • Stir in the red bell pepper and cherry tomatoes; cook for 2-3 minutes.
  • Add the rice, oregano, cumin, salt, and black pepper. Stir to coat the rice with the spices.
  • Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and liquid is absorbed.
  • Remove from heat, fluff with a fork, and stir in sliced olives.
  • Garnish with fresh parsley or cilantro and optional feta cheese before serving.

Notes

  • Substitute basmati rice with brown rice for added fiber. Adjust cooking time accordingly.
  • Add protein like grilled chicken or chickpeas for a complete meal.
