Ingredients

  • 8 bone-in skin-on chicken thighs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup whole milk
  • Salt and black pepper to taste
  • Chopped parsley for garnish optional

Instructions

  • Season the chicken thighs with salt and black pepper.
  • In a large Dutch oven or skillet, melt the butter over medium-high heat.
  • Brown the chicken thighs on both sides, then set them aside.
  • Lower the heat and add the diced onion. Cook until it's soft and translucent, about 5 minutes.
  • Add the minced garlic and cook for 1 minute, until fragrant.
  • Sprinkle the flour over the onions and garlic, stirring to combine. Cook for 2-3 minutes to eliminate the raw flour taste.
  • Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  • Add the milk and stir. Let it simmer and thicken for 5-7 minutes.
  • Return the chicken thighs to the pan, cover, and lower the heat.
  • Cook the smothered chicken for 30-40 minutes until fully cooked, and the gravy reaches the desired consistency.
  • Taste and adjust seasoning with salt and pepper.
  • Garnish with chopped parsley if desired, and serve over mashed potatoes, rice, or your preferred side dish.

Notes

This recipe pairs wonderfully with mashed potatoes, rice, or a side of your favorite vegetables. The gravy is savory and creamy, making it an ideal comfort food for family dinners.
