Crunchy & Creamy Cucumber-Avocado Summer Salad

Ingredients
  

  • 2 Large English Cucumbers sliced into half-moons
  • 2 Ripe Hass Avocados cubed
  • 1/4 cup Red Onion thinly sliced
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Fresh Dill chopped
  • Juice of 1 Lime
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and Black Pepper to taste

Method
 

  1. Add the sliced cucumbers and red onions to a large bowl.
  2. In a small jar, whisk together the lime juice, olive oil, salt, pepper, and dill.
  3. Add the cubed avocado to the bowl.
  4. Drizzle the dressing over the vegetables.
  5. Gently toss with a large spoon, being careful not to mash the avocado.
  6. Top with crumbled feta and serve immediately.

Notes

If you aren't a fan of raw onion, soak the slices in cold water for 5 minutes before adding to the salad to take the "bite" out.
