Method
- Add the sliced cucumbers and red onions to a large bowl.
- In a small jar, whisk together the lime juice, olive oil, salt, pepper, and dill.
- Add the cubed avocado to the bowl.
- Drizzle the dressing over the vegetables.
- Gently toss with a large spoon, being careful not to mash the avocado.
- Top with crumbled feta and serve immediately.
Notes
If you aren't a fan of raw onion, soak the slices in cold water for 5 minutes before adding to the salad to take the "bite" out.
