Ingredients
  

  • 4 cups 1 liter water
  • 1/4 cup 60g kosher salt (or sea salt)
  • 1/4 cup 50g sugar (optional, but helps with caramelization)
  • 4 cloves garlic smashed
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried thyme or a few fresh sprigs
  • 2 bay leaves
  • Optional: 1 lemon sliced

Instructions
 

  • Prepare the Brine: In a large pot, combine water, salt, sugar, garlic, peppercorns, thyme, and bay leaves. Stir until the salt and sugar are dissolved.
  • Heat: Bring the mixture to a simmer for about 2-3 minutes, then remove from heat. Let the brine cool completely. You can add ice cubes to speed up the cooling process if necessary.
  • Brine the Chicken: Once the brine is cool, place the chicken (whole or pieces) into a large container or a resealable bag. Pour the brine over the chicken, ensuring it is fully submerged.
  • Brining Time: Cover and refrigerate. Brine for 4-6 hours for pieces, or up to 12 hours for a whole chicken.
  • Rinse & Cook: After brining, rinse the chicken under cold water, pat it dry, and then proceed with your preferred cooking method (roasting, grilling, etc.).
  • Enjoy your flavorful, juicy chicken!

Notes

Ensure the brine is fully cooled before adding chicken to avoid cooking it prematurely. Brining too long can result in overly salty chicken, so keep an eye on brining time.
