Ingredients
  

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/4 cup sliced almonds for topping

Instructions
 

Preheat Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a bowl, combine almond flour, all-purpose flour, baking powder, and salt. Set aside.

Cream Butter and Sugar:

  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add Egg and Extract:

  • Beat in the egg and almond extract until well combined.

Combine Mixtures:

  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Shape Cookies:

  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Press a sliced almond on top of each cookie.

Bake:

  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Cool:

  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
