Instructions
Prepare the Fillings: Cook rice vermicelli noodles according to package instructions, drain, and rinse with cold water. Prepare all vegetables and herbs as described above. If using shrimp, ensure they are cooked, peeled, and deveined.
Prepare the Dipping Sauce: In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, minced garlic, and sriracha sauce (if using). Adjust the consistency with a little water if needed. Set aside.
Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until it becomes soft and pliable. Place it on a clean, damp kitchen towel or a plate.
Assemble the Spring Rolls: Place a small amount of each filling ingredient (lettuce, noodles, carrot, cucumber, bell pepper, mint, cilantro, peanuts, and shrimp if using) in the center of the softened rice paper wrapper, leaving space at the edges.
Roll the Spring Rolls: Fold the bottom edge of the wrapper over the fillings, then fold in the sides, and roll tightly to enclose the fillings completely. Repeat with the remaining ingredients.
Serve: Arrange the spring rolls on a platter and serve immediately with the prepared dipping sauce.
