Ingredients
  

  • 1 lb 450g beef brisket or shank, thinly sliced
  • 8 cups 2 liters beef broth
  • 2 cups 500ml water
  • 4 slices ginger
  • 4 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 tablespoon dark soy sauce for color
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 star anise
  • 2 cinnamon sticks
  • 4 dried shiitake mushrooms optional
  • 1 package of Chinese wheat noodles or spaghetti
  • Green onions thinly sliced, for garnish
  • Fresh cilantro leaves for garnish
  • Chili oil or chili paste optional

Instructions
 

  • In a large pot, combine beef broth, water, ginger, garlic, soy sauce, Shaoxing wine, dark soy sauce, sugar, star anise, cinnamon sticks, and dried shiitake mushrooms (if using). Bring to a simmer over medium heat.
  • Once the broth is simmering, add the sliced beef. Let it simmer gently for about 1 to 1.5 hours until the beef is tender. Skim off any foam or impurities that rise to the surface.
  • While the beef is cooking, prepare the noodles according to the package instructions. Once cooked, drain and set aside.
  • Once the beef is tender, taste the broth and adjust seasoning with salt and pepper if needed. Remove the star anise, cinnamon sticks, and dried shiitake mushrooms (if used).
  • To serve, divide the cooked noodles into bowls. Ladle the hot beef broth and beef slices over the noodles. Garnish with sliced green onions and fresh cilantro leaves. If you like it spicy, add a spoonful of chili oil or chili paste.
