Delhi's street style 'Chhole' recipe

Hello everyone,
Being a Delhite, i would love to share the recipe of street style ‘chhole’ which we get all over delhi with ‘bhature’.
Try this recipe at your home.

The recipe for the same :-

INGREDIENTS:
1) Chickpeas (chhole) – 200 gms
2) Onion (pureed) – 3
3) Tomato (pureed) – 2
4) Green chillies (slit) – 2
5) Baking soda – 1/4 tsp
6) Salt – To taste
7) Chhole masala – 2 tbsp
8) Coriander powder – 1 tbsp
9) Turmeric powder – 1/2 tbsp
10) Red chilli powder – 1/2 tbsp
11) Garam masala – 1/4 tbsp
12) Bayleaves (Tej patta) – 1
13) Peppercorn (Kali mirch) – 3-4
14) Aamchur powder (optional) – 1 tbsp
15) Teabags – 2
16) Oil – 1/2 cup
17) Ginger Garlic Paste – 1 tbsp
18) Kasuri methi – 2 tbsp
19) Chopped coriander – for grnish

For tempering (tadka)
1) Oil – 2 tbsp
2) Slit green chilli – 1
3) Ginger julienne – 1/2 inch
4) asafoetida (hing) – 1/2 tbsp

METHOD:

1) Wash and soak chickpeas overnight.
2) Boil chickpeas with salt, baking soda and tea water (for dark colour).
3) Heat oil, add bayleaves and peppercorns, ginger garlic paste and green chilli.
4) Cook it, then add pureed onion, cook it till brown, then add pureed tomato.
5) Cook for a while, then add salt and all dry spices.
6) Cook till oil gets separated from masala then add boiled chickpeas.
8) Add little water and powdered kasuri methi and bring it to boil.
9) Then cook it on slow flame for 10 minutes, then add choppped coriander.
10) Add tempering of ginger, green chilli and thing.
